Mexican Cornbread

Hey everyone!

I made this Mexican Cornbread last week because we had a Mexican food night with some family and friends. My in-laws made tacos, rice, and some other dishes, and our friends brought some yummy desserts. I've made this Mexican Cornbread quite a few times. The recipe is from an old church cookbook that my mother-in-law has. I really like this recipe, and it has just the right amount of spice for me with the jalapeños. You could leave these out if you don't want the spiciness. I definitely recommend this recipe if you're in the market for a new Mexican Cornbread recipe!



Mexican Cornbread

Prep Time: 15 - 20 minutes
Cook Time: 40 - 45 minutes
Servings: 24

Ingredients:
2 cups of corn meal mix
1 1/2 cups of milk
2 eggs
2 tablespoons of bacon drippings
1 can of cream style corn
1 pound of ground beef
1 teaspoon of salt
1 large onion, chopped
1/2 pound of grated cheese
4 jalapeño peppers, chopped



Directions:
1.) Preheat oven to 350 degrees Fahrenheit.
2.) Mix first 5 ingredients and let stand.



3.) Brown meat. Add onions, peppers, and salt. Drain.



4.) Pour half of batter into well greased skillet or baking dish.
5.) Add meat mixture to top and sprinkle with cheese.
6.) Pour other half of batter on top and bake for 40-45 minutes

Hey everyone! Here's a recipe that I make fairly often. I'm not a huge fan of meatloaf really. This is more for the husband than anything, but this meatloaf has such a good flavor that I will eat it. Mocha Punch

Hey y'all! This punch can be customized with any coffee and chocolate ice-cream of your choosing. The original recipe did not call for whipped cream and chocolate sprinkles to be added, but I saw where someone commented that they did this, so I decided to try it. I must say that the punch was awesome by itself, but adding the toppings make it even better! It was soooooo creamy. Plus, who doesn't like chocolate sprinkles? If you have any left over you can even store it in an airtight container in your refrigerator and save for later! I just had a cup of what we had left, and it is still delicious even after the ice-cream has completely melted. Boston Cream Poke Cake

Hey guys! I can honestly say that this is one of the BEST desserts that I have made so far. Definitely in my top 5. Maybe even my top 3.  This was a new recipe that I tried on Labor Day, and I wish I would have found it sooner! It's one of my new favorites. It is so moist with the vanilla pudding, and i t is topped with a simple chocolate ganache that is just DELICIOUS !  I learned a few things while making this for the first time. First, you have to have some patience while waiting for this dessert to be done, but it's worth the wait. Second, if I had a baking dish slightly larger than a 9 X 13 I would use it next time because after adding the pudding and ganache on top, it was almost flowing over the pan. I definitely could not put a lid or anything on top to cover the cake without messing it up.
