Instant Pot Orange Chicken

One of my Christmas presents this year was a nifty new kitchen gadget, an Instant Pot®. Have you heard of this thing? It's an electronic pressure cooker. Apparently it's all the rage right now, even though I was unaware. I had heard of it a couple of times and have been wanting a pressure cooker but didn't give it much thought. I guess that Santa thought that I needed one, and I'm happy to say that I think that I will love it! I'm thinking that it will get more use than my slow cooker. It cooks food 70% faster and has tons of functions. You can even use it as a slow cooker, steamer, or rice cooker. I have made a batch of white rice with it, and it turned out better than when I use my actual rice cooker....seriously. It did an amazing job. The first meal that I made using this gadget was a deer roast with potatoes and carrots. It turned out SO tender and just fell right off of the bone! The recipe below is pretty much the original that I used, even though I c...

A.1. Meatloaf

Hey everyone! Here's a recipe that I make fairly often. I'm not a huge fan of meatloaf really. This is more for the husband than anything, but this meatloaf has such a good flavor that I will eat it. I found this recipe on the side of an A.1. Original Sauce bottle and gave it a try a few years ago, and it has just kind of stuck! Whip up some mashed potatoes and heat up some green beans to go with it, and you've got yourself a meal. Recipe from: A.1. Original Sauce bottle Prep Time: 10 minutes Cook Time: 60-70 minutes Servings:6 A.1. Meatloaf Ingredients: 2 pounds ground beef 1 onion, chopped 8 oz. can tomato sauce 1 cup dry breadcrumbs 1/2 cup A.1. Original Sauce 2 eggs, beaten 1/2 teaspoon black pepper Directions: 1.) Preheat oven to 350 degrees Fahrenheit. 2.) Divide tomato sauce. 3.) Mix half of tomato sauce and all other ingredients together in a large bowl. 4.) Using your hands, knead all ingredients until thoroughly combined. 5.) ...

Chicken Parmigiana for Two

Hey guys! Here's a recipe that I made for dinner a couple of nights ago. I'm not sure why I don't make this more often; it's so good! And, it takes almost no prep so it's an easy dinner idea for weeknights. I have this recipe written down in my recipe book and have made it a few times in the past and came across it when looking for something to make the other night. I'm not sure where I originally found it, somewhere on the internet. All I needed to buy was the cheese, and we had an easy dinner for two. I love recipes for two because I never end up wasting food, which is easy to do with just two people eating. If you're cooking for four people, you could also make four smaller portions out of this recipe, depending on the size of the chicken breasts. It can also be easily doubled or tripled depending on how many people you're cooking for. I served this with a small salad and a slice of garlic bread. This is a great recipe that I think almost everyone w...

Hey everyone! Well, that chili (get it?) fall weather is officially here, so I thought that it was a good time to share with you one of the the EASIEST chili recipes that I make. I make this pretty often in the fall and winter months. We actually had it for dinner one night last week. It is just SO easy and really filling. Perfect for these autumn evenings after a long day at work! And you really can't beat having dinner ready in 15 minutes, right?!  (Scroll to bottom to see recipe without pictures.) Crock Pot Mushroom Roast

Hey friends! I've got a new recipe for you! It's called a Crock Pot Mushroom Roast, but really the only thing mushroom is the Campbell's Cream of Mushroom soup that you use. It also has carrots, red potatoes, and onion soup mix. Yum! (Scroll to bottom to see recipe without pictures.) I don't remember where I got the recipe from, but I have been making it for a few years, and it has become one of my husband's favorites. He requests it pretty often in the fall and winter months. Now that it's officially fall, this is the PERFECT dinner for those chilly evenings. (Not that it's chilly here in Arkansas yet. I mean, when I made this the other weekend it was 90 degrees outside.) Just p op a few dinner rolls in the oven right before serving, and you've got yourself an easy, warm, hearty meal great for any night of the week! Enjoy! Crock Pot Mushroom Roast Ingredients: 3 pound roast (chuck or rump) 3 cups of baby carrots 4-5 small red potatoes ...

Cabbage & Sausage Foil Packets

Hey everyone! Hope you're doing well! I still have a couple of recipes that I tried over Labor Day weekend that I need to share with you! So this is a new recipe that I came across on Facebook and decided to try out Labor Day weekend. This looked perfect because it's a recipe that you cook on the grill. Since it was on the grill, the hubby even helped. I followed the instructions exactly, and it turned out amazing! This is a really good recipe. You can make the packets and keep them in the refrigerator for whenever you're ready for them.  Just like the crockpot, our grill is used pretty regularly all year long (except when it's REALLY cold). Even though it's almost Fall, it's a warm 92 degrees here in Arkansas today, so the grill is definitely still open for business. We even grilled brats today for lunch! If you don't have or like using a grill, you can cook this in your oven. This is a super easy recipe that is pretty healthy too! Enjoy 🙂 (Scrol...

Sweet & Sour Meatballs

Hey friends! Well, I tried this new recipe for sweet & sour meatballs last week, and they were sooooooo good! I took what was left to the in-laws, and they liked them as well. In fact, my mother-in-law asked me today if I had put the recipe up on the blog yet because she wanted to make them herself. I have made sweet & sour meatballs in the crockpot before, but I didn't like the way that they turned out. They did not keep their shape and turned out too mushy. Plus, I didn't care for the recipe that I had used for the sauce. This new recipe is fast and done on the stove top. It was great because you saute the meatballs first, and they stay firm and keep their shape. Plus, I thought that the sweet and sour sauce was delicious! I served these over white rice that I cooked in my rice cooker, and it was a fantastic weeknight dinner. I definitely recommend this recipe! 👍 (Scroll to bottom to see recipe without pictures.)
