Slow Cooker Broccoli Beef

Hey y'all!

Well, we've almost made it to Friday, and I've got a new recipe for you to try out this weekend! This Slow Cooker Broccoli Beef is soooooo good. Instead of heading to that Chinese buffet, stay home and mix this up instead. 
I don't recall where I originally found this recipe, but I have made it several times in the crock-pot, and it's ALWAYS delicious. I decided a couple weekends ago  to try this recipe using the Slow Cook option on my new Instant Pot®. It's supposed to cook just like a slow cooker on this setting. You keep the time and temperature the same as you would in a slow cooker and make sure that the lid is venting. I cooked the beef mixture in the Instant Pot® for 4.5 hours before adding the cornstarch and water mixture, and it worked out perfectly! 
As you will see, this recipe calls for flank steak, but I have used different cuts, and as long as it is thinly sliced, it always seems to turn out good. This particular time I used bottom round steak. I have also cooked this both with and without the red chilli flakes. I personally like the little bit of spice that this gives it; however, I normally leave it out for the husband's sake.
I was very impressed with how well the Instant Pot® did on the slow cook setting, and I will be trying it out on other recipes that I would normally use my crock-pot for. Whether you use your trusty slow cooker or fancy new Instant Pot®, you really need to give this one a try. It won't disappoint! 


Servings: 4
Time: 4.5 - 5.5 hours

Slow Cooker Broccoli Beef
Ingredients:
1.5 lb. thinly sliced beef flank steak (2 inch pieces)
1 cup beef broth
2/3 cup soy sauce
1/3 cup brown sugar
1 tablespoon sesame oil
1 tablespoon minced garlic
2 tablespoons cornstarch
4 tablespoons cold water
4 cups broccoli florets
Optional: 1/4 teaspoon red chilli flakes




Directions:
1.) Grease inside of slow cooker or Instant Pot®.
2.) Add steak, broth, soy sauce, sugar, sesame oil, garlic, and chilli flakes.


3.) Slow Cooker: Cover and cook on HIGH heat 4-5 hours.
Instant Pot: Select Slow Cook, More. Set Time. Make sure that the lid is venting.



4.) After mixture has cooked, remove lid from slow cooker/Instant Pot®. In a small bowl, whisk together cornstarch and water until dissolved. Add to cooker/pot and stir.



5.) Cover and cook for additional 20-25 minutes.
6.) Cook the broccoli during this time.
7.) Add cooked broccoli and serve.

Mocha Punch

Hey y'all! This punch can be customized with any coffee and chocolate ice-cream of your choosing. The original recipe did not call for whipped cream and chocolate sprinkles to be added, but I saw where someone commented that they did this, so I decided to try it. I must say that the punch was awesome by itself, but adding the toppings make it even better! It was soooooo creamy. Plus, who doesn't like chocolate sprinkles? If you have any left over you can even store it in an airtight container in your refrigerator and save for later! Boston Cream Poke Cake

Hey guys! I can honestly say that this is one of the BEST desserts that I have made so far. Definitely in my top 5. Maybe even my top 3.  This was a new recipe that I tried on Labor Day, and I wish I would have found it sooner! It's one of my new favorites. It is so moist with the vanilla pudding, and i t is topped with a simple chocolate ganache that is just DELICIOUS !  I learned a few things while making this for the first time. First, you have to have some patience while waiting for this dessert to be done, but it's worth the wait. Second, if I had a baking dish slightly larger than a 9 X 13 I would use it next time because after adding the pudding and ganache on top, it was almost flowing over the pan. I definitely could not put a lid or anything on top to cover the cake without messing it up.
