Happy Fourth of July!
I've always wanted to make one of those cute cakes in a mug that you see all over Pinterest, and last night I finally did! I found this recipe by Ree Drummond on Food Network's website. I chose it because #1- It's chocolate, and #2- I already had all of the ingredients in my pantry.
For this recipe you will need a microwave safe ceramic mug, a microwave, and a few simple ingredients. I used a cute patriotic mug that I've been using for my coffee these last few weeks. I really liked the chocolate taste of this. It did however remind me of one of those brownies that you find in TV dinners, but what do you expect? It's microwaved cake for crying out loud. I did find it a little dry even though I followed the measurements and time exactly. If I made this again, I would probably add a bit more milk or vegetable oil to make it more moist. If you're in a pinch and need a cake fix but don't have the time or want to make an entire cake, this Chocolate Cake in a Mug will do the trick! This would be good to make if you're out in your RV, if you're the only one in your house that likes chocolate cake, or if you just want to experience eating cake out of a mug. Have fun!

Servings: 1
Time: 10-15 minutes
Ingredients:
3 tablespoons of all purpose flour
3 tablespoons of sugar
2 tablespoons of cocoa powder
1/4 teaspoon of baking powder
3 tablespoons of milk
3 tablespoons of vegetable oil
3 tablespoons of chocolate chips
Optional: pinch of salt
Optional: splash of vanilla extract
Directions:
1.) With a fork, mix the flour, sugar, cocoa powder, baking powder, and salt inside of the mug.
2.) Add the milk, vegetable oil, and vanilla extract. Blend until smooth.
4.) Microwave on high for 90 seconds. Do not over cook or will be too dry.
5.) Let stand 2-3 minutes before eating.
