Blueberry Croissant Breakfast Bake

Hey guys! I've got another breakfast recipe for you that I made this weekend! This recipe is from a Tasty video that I came across on Facebook. I have had it saved for a while and decided to finally make it this weekend. As you will see in my picture of ingredients below, I used Neufchatel cheese instead of cream cheese. It was next to the cream cheese at the grocery store, came in a box that looked just like the cream cheese box, and so I accidentally grabbed it instead. It did give a different taste to it, and I wish I would have had actual cream cheese, but it actually did not turn out bad.    This recipe was very easy, and if you like sweet things like pastries for breakfast, you will like this Blueberry Croissant Breakfast Bake! Tater Tot Casserole

Hey friends! I hope that you enjoy this yummy breakfast casserole. I've had this recipe in my cookbook for a long time. I found this online and printed it off, but I could not find where I originally came across it. Every time I have made this I have used sausage, but you can use any breakfast meat that you like or even use a combination. Have fun! (Scroll down to the bottom to see the recipe without pictures.) Tater Tot Casserole Servings: 6-8 Prep Time: 15 minutes Cook Time: 45 minutes Ingredients: Your choice of 1 pound of ground pork breakfast sausage, cubed ham, or bacon (I use sausage) 2-4 cups shredded cheddar cheese 2 cups milk 4 eggs 2 pounds frozen tater tots Directions: 1.) Best Ever Zucchini Bread

Hey guys! My mom would make zucchini bread in the summertime when I was growing up. I always loved it. I hadn't had any in a really long time, and the other day was my first time ever making it. We just had a zucchini given to us, so I decided to try my hand at Zucchini Bread. I was very pleased with how it turned out! I came across this recipe on the food blog "Butter with a side of Bread." It was my first time coming across this blog. This recipe even had a short video to go along with it. I definitely recommend checking out this blog. It's laid out nicely, and they have a lot of good recipes so I will probably be trying some of them out soon.  On the post for this recipe, I read that you do not need to peel the zucchini, just wash and cut off the ends. Also, it is best to drain excess water from the zucchini before making bread. Grate beforehand and allow to sit at least 10 minutes to let water drain. You can then even squeeze out any excess water. This partic

BBQ Pork Chops for Two

Hey guys! This recipe is one that I've been making for a while. I found this when searching for recipes for just two people shortly after my husband and I married. I really like "for two" recipes because nothing gets wasted, and I really hate wasting food! It's also a crock pot recipe, which I love. If you're cooking for four people, just double the recipe!  These BBQ Pork Chops are SO easy and you only need just a few ingredients! Recipe from: Pillsbury BBQ Pork Chops for Two Prep Time: 10 minutes Cook Time: 5-6 hours Servings: 2 Ingredients: 2 boneless pork chop loins (1 inch thick, about 3/4 lb, trimmed of fat) 2 slices of onion 1 garlic clove, minced 1/2 cup of barbecue sauce 1 tablespoon of water 1 teaspoon of cornstarch Directions: 1.) Place pork chops in slow cooker. Top each with onion slice. Sprinkle with garlic. Pour barbecue sauce over top. 2.) Cover, cook on LOW setting 5-6 hours. 3.) About 5 minutes before serving, remo

Mexican Cornbread

Hey everyone! I made this Mexican Cornbread last week because we had a Mexican food night with some family and friends. My in-laws made tacos, rice, and some other dishes, and our friends brought some yummy desserts. I've made this Mexican Cornbread quite a few times. The recipe is from an old church cookbook that my mother-in-law has. I really like this recipe, and it has just the right amount of spice for me with the jalapeños. You could leave these out if you don't want the spiciness. I definitely recommend this recipe if you're in the market for a new Mexican Cornbread recipe! Mexican Cornbread Prep Time: 15 - 20 minutes Cook Time: 40 - 45 minutes Servings: 24 Ingredients: 2 cups of corn meal mix 1 1/2 cups of milk 2 eggs 2 tablespoons of bacon drippings 1 can of cream style corn 1 pound of ground beef 1 teaspoon of salt 1 large onion, chopped 1/2 pound of grated cheese 4 jalapeño peppers, chopped Directions: 1.) Preheat oven to 350 degree

Yellow Squash Casserole

Hey guys! Hope you had a good Monday!  It's definitely summertime in Arkansas. All of this week is supposed to be HOT. Squash and summertime in Arkansas kind of go hand in hand. We eat a lot of it this time of year because it's in season, and you can buy it pretty much anywhere and at the local farmer's markets. I actually bought the squash I used in this recipe from a produce stand down the road. I have made this Yellow Squash Casserole twice now. I made it a couple of weeks ago but was in a hurry and did not take pictures. It was so good that I decided that it needed to be on the blog, so I made it again for lunch yesterday! You're welcome 😉 When I made this recipe the first time, I used salted butter. I tried using unsalted butter the second time making it, and I have to say that I think it tastes better using the salted. I ended up adding salt while I was eating it the second time around. I also modified the recipe a bit after reading some of the comments about

Soy Glazed Salmon

Hey everyone! For this recipe I like to use skinless salmon fillets, and because it is just my husband and I, I usually only use 2 fillets but keep the recipe for the glaze the same. I have cut the recipe for the glaze in half before, and it turns out great as well. I just like keeping the glaze measurements the same because that way we end up with extra glaze that we can use for dipping the salmon into. This dish is great served over a bed of rice and with some steamed veggies. Hope that you enjoy it! Servings: 4 Prep Time: 5 minutes Cook Time: 15-20 minutes Soy Glazed Salmon Ingredients: 1/4 cup of brown sugar 1/4 cup of olive oil 3 tablespoons of soy sauce (for a healthier option use low sodium) 2 tablespoons of lemon juice 2 tablespoons of water 2 pounds of salmon fillets These salmon fillets are from Wal-Mart. They come individually sealed, which is nice when you're only cooking for 2 people. Directions: 1.) Preheat oven to 400 degrees Fahre

Orange Julius Copycat

Hey y'all I remember being a teenager and having my first Orange Julius® from the Dairy Queen® in the mall. I went back there for one whenever I got a chance. When I came across this recipe while searching for "summer" drinks, I knew that I had to give this a try. I tried looking up the exact ingredients that DQ® uses. I found some of the same ingredients that this recipe calls for, but it looks like they use some sort of base and sweeteners. Who really knows what all is in it... Anyway, I think that this copycat recipe is very similar. Recipe from: The Frugal Girls Orange Julius Copycat Recipe Total Time: 5 minutes Ingredients: 6 ounces Orange Juice concentrate, frozen 1 cup of water 1 cup of milk 1/2 cup of sugar (I used less sugar, about 1/4 cup and it was still plenty sweet.) 2 teaspoons of vanilla extract 1 scoop of vanilla ice cream 10 ice cubes Directions: 1.) Place all ingredients in blender. Blend well. It's so easy!
