Chicken Parmigiana for Two

Hey guys!

Here's a recipe that I made for dinner a couple of nights ago. I'm not sure why I don't make this more often; it's so good! And, it takes almost no prep so it's an easy dinner idea for weeknights. I have this recipe written down in my recipe book and have made it a few times in the past and came across it when looking for something to make the other night. I'm not sure where I originally found it, somewhere on the internet. All I needed to buy was the cheese, and we had an easy dinner for two. I love recipes for two because I never end up wasting food, which is easy to do with just two people eating. If you're cooking for four people, you could also make four smaller portions out of this recipe, depending on the size of the chicken breasts. It can also be easily doubled or tripled depending on how many people you're cooking for. I served this with a small salad and a slice of garlic bread. This is a great recipe that I think almost everyone will love! 



Cook Time: 1 hour
Servings: 2-4
Chicken Parmigiana for Two

Ingredients:
1 egg, beaten
1/2 - 1 cup dry bread crumbs
2 boneless, skinless chicken breasts (thawed)
16 oz. spaghetti sauce
about 1/3 cup shredded mozzarella 
about 1/3 cup shredded parmesan


Directions:
1.) Preheat oven to 350 degrees Fahrenheit.
2.) Lightly grease baking sheet.
3.) Dip thawed chicken breasts in egg, then crumbs. (Using paper towels, make sure that the chicken is as dry as possible before dipping in the egg.)




4.) Cook on baking sheet 40 minutes or until juices run clear.
5.) Pour 1/2 of spaghetti sauce into baking dish. Add cooked chicken. Cover chicken with remaining sauce.
6.) Sprinkle cheeses on top.


7.) Bake additional 20 minutes in oven.

Mocha Punch

Hey y'all! This punch can be customized with any coffee and chocolate ice-cream of your choosing. The original recipe did not call for whipped cream and chocolate sprinkles to be added, but I saw where someone commented that they did this, so I decided to try it. I must say that the punch was awesome by itself, but adding the toppings make it even better! It was soooooo creamy. Plus, who doesn't like chocolate sprinkles? If you have any left over you can even store it in an airtight container in your refrigerator and save for later! Boston Cream Poke Cake

Hey guys! I can honestly say that this is one of the BEST desserts that I have made so far. Definitely in my top 5. Maybe even my top 3.  This was a new recipe that I tried on Labor Day, and I wish I would have found it sooner! It's one of my new favorites. It is so moist with the vanilla pudding, and i t is topped with a simple chocolate ganache that is just DELICIOUS !  I learned a few things while making this for the first time. First, you have to have some patience while waiting for this dessert to be done, but it's worth the wait. Second, if I had a baking dish slightly larger than a 9 X 13 I would use it next time because after adding the pudding and ganache on top, it was almost flowing over the pan. I definitely could not put a lid or anything on top to cover the cake without messing it up. Also, when poking the holes in the cake, I wish I would have made them a little bit larger so that the pudding would have soaked more into the cake. After pouring the gana...
