Hey friends!
Tomorrow is the Fourth! Maybe you have a BBQ or party planned. This Watermelon-Mint Cooler would be a great drink to make a pitcher of and serve to your guests (or you could just drink the whole thing yourself, like I did.)
Today I had some leftover watermelon that I didn't want to go to waste, and our mint plant is doing really well, so I wanted to find a recipe combining both. With a simple Google search I found just the thing! I came across the recipe for this Watermelon-Mint Cooler and gave it a try. I REALLY liked this drink! It was super refreshing and as my husband said, "very summer-y." I used a frozen lemonade concentrate. My watermelon did have seeds, I just picked them out before adding to the blender. I did not strain the watermelon/lemonade mixture. The watermelon and mint in my picture below are halved because I only had about 2 cups of watermelon in the refrigerator. The only thing that I think I would change about this recipe is that I think it calls for a little too much mint. I actually did not end up using the entire amount because it was just too strong for my liking. Besides that, I really liked this recipe. Give it a try!
