Welcome to My Blog! And Lembas Bread!

Hey Guys!!!
I decided to start a food blog to share recipes of things I have been making for a little while and to share new recipes that I come across and try. I'm not a chef or photographer, but I enjoy cooking/baking as well as taking photos so I thought that a blog with both of these would be fun! I'm all about things being simple, so most recipes you will find here are easy-peasy ;)  I hope you enjoy!

This week has been Spring Break so I've been inspired to finally cook some new things! My husband sent me a link to this recipe April 22, 2016 (almost a year ago) asking me to make this Lord of the Ring's Lembas Bread. Where did 2016 go?!?! I told him I would, and I kept my promise (almost a year later). Anyway, I didn't have the banana leaves on hand (who does?), but I had all of the other ingredients in the pantry, except the heavy cream. I actually purchased it last week. Yes, I planned ahead! Enjoy 🙂

Lembas Bread

Ingredients:
2 1/2 cups of flour
1 tablespoon of baking powder
1/2 teaspoon of salt
8 tablespoons of cold butter
1/3 cup of brown sugar
1 teaspoon of cinnamon
1/2 teaspoon honey
2/3 cup of heavy cream (or more, if necessary)
1/2 teaspoon of vanilla
parchment paper
optional:
1 package frozen banana leaves
twine

Directions:
1.) Preheat oven to 400 degrees Fahrenheit. (I actually waited until I put the dough into the refrigerator to pre-heat oven.)
2.) Mix the flour, baking powder and salt into a large bowl.
3.) Add the butter in 8 sections and mix with a fork (I used a potato masher) until the mixture resembles fine granules.
4.) Add the sugar and cinnamon, and mix them thoroughly into the mixture.
5.) Add the cream and vanilla and stir them in with a fork until a nice, thick dough forms. If dough is too dry, add more cream.
6.) Form dough into ball with your hands and refrigerate dough for 10 minutes.
7.) Roll 1/2 of the dough out to 1/4 inch thickness on a floured surface. Cut the dough into 3-inch squares and place carefully on a baking sheet lined with parchment paper. Use a knife to score the square in a criss-cross pattern. Reform the ball of dough with the unused edges.
8.) Bake for 12-15 minutes until the bread just starts to brown. Remove from oven to cool and repeat the dough rolling, cutting and baking for the second half.
9.) Optional: When completely cool, wrap each square in a 8 x 10 inch piece of banana leaf and tie with a piece of twine. (I did not do this part, but I'm sure it would look cool if you did!)

Enjoy!

Cream Cheese Teddy Graham Dip

Hey y'all! This is a sweet and yummy treat that I have made several times before. I found the recipe a few years ago in a sale paper at a local grocery store. It is SUPER easy....and has cream cheese! The hardest part is putting it in the refrigerator to give it time to cool and harden. This time I did not have any mini chocolate chips on hand, so I used regular sized chips, and they worked just fine! Also, I couldn't decide on which Teddy Grahams to use, so I bought two different kinds for dipping. This would be a great dessert for kids of all ages, or even those of us who are just kids at heart. 💗 🐻🐻🐻🐻🐻🐻🐻🐻🐻🐻🐻🐻🐻🐻 Recipe from: CV's sale paper Total Time: 10 minutes Servings: about 10 Cream Cheese Teddy Graham Dip Ingredients: 8 oz. package of cream cheese 1/2 cup of butter, softened 3/4 cup of powdered sugar 2 tablespoons of brown sugar 1 teaspoon of vanilla extract 1 cup of mini semi-sweet chocolate chips Box of Teddy Grahams of your ...

A.1. Meatloaf

Hey everyone! Here's a recipe that I make fairly often. I'm not a huge fan of meatloaf really. This is more for the husband than anything, but this meatloaf has such a good flavor that I will eat it. I found this recipe on the side of an A.1. Original Sauce bottle and gave it a try a few years ago, and it has just kind of stuck! Whip up some mashed potatoes and heat up some green beans to go with it, and you've got yourself a meal. Recipe from: A.1. Original Sauce bottle Prep Time: 10 minutes Cook Time: 60-70 minutes Servings:6 A.1. Mocha Punch

Hey y'all! This punch can be customized with any coffee and chocolate ice-cream of your choosing. The original recipe did not call for whipped cream and chocolate sprinkles to be added, but I saw where someone commented that they did this, so I decided to try it. I must say that the punch was awesome by itself, but adding the toppings make it even better! It was soooooo creamy. Plus, who doesn't like chocolate sprinkles? If you have any left over you can even store it in an airtight container in your refrigerator and save for later! I just had a cup of what we had left, and it is still delicious even after the ice-cream has completely melted. This Mocha Punch would be great for a bridal shower, baby shower, birthday party, or even to celebrate the end of the school year! 😉 Enjoy! 🎈🎈🎈🎈🎈🎈🎈🎈🎈🎈🎈🎈🎈🎈 Recipe from: "Allrecipes.com" Servings: around 20 small cups Mocha Punch Ingredients: 4 cups of brewed coffee of your choice 1/4 cup of su...

Boston Cream Poke Cake

Hey guys! I can honestly say that this is one of the BEST desserts that I have made so far. Definitely in my top 5. Maybe even my top 3.  This was a new recipe that I tried on Labor Day, and I wish I would have found it sooner! It's one of my new favorites. It is so moist with the vanilla pudding, and i t is topped with a simple chocolate ganache that is just DELICIOUS !  I learned a few things while making this for the first time. First, you have to have some patience while waiting for this dessert to be done, but it's worth the wait. Second, if I had a baking dish slightly larger than a 9 X 13 I would use it next time because after adding the pudding and ganache on top, it was almost flowing over the pan. I definitely could not put a lid or anything on top to cover the cake without messing it up. Also, when poking the holes in the cake, I wish I would have made them a little bit larger so that the pudding would have soaked more into the cake. After pouring the gana...
