Sweet & Sour Meatballs

Hey friends! Well, I tried this new recipe for sweet & sour meatballs last week, and they were sooooooo good! I took what was left to the in-laws, and they liked them as well. In fact, my mother-in-law asked me today if I had put the recipe up on the blog yet because she wanted to make them herself. I have made sweet & sour meatballs in the crockpot before, but I didn't like the way that they turned out. They did not keep their shape and turned out too mushy. Plus, I didn't care for the recipe that I had used for the sauce. This new recipe is fast and done on the stove top. It was great because you saute the meatballs first, and they stay firm and keep their shape. Plus, I thought that the sweet and sour sauce was delicious! I served these over white rice that I cooked in my rice cooker, and it was a fantastic weeknight dinner. I definitely recommend this recipe! 👍 (Scroll to bottom to see recipe without pictures.) Slow Cooker Chicken Enchilada Casserole

Hey everyone! Well, how about another slow cooker recipe? I came across this a while back and have been wanting to try it since I regularly make enchiladas in the oven with pretty much these exact same ingredients. The only difference is that I usually use beef instead of chicken, but I wanted to switch things up a bit and try this out with chicken. I used frozen chicken breasts that I defrosted in the microwave. I cooked the chicken and sauce on high for the 4 hours, and it turned out great. The chicken wasn't dry at all because of all of the enchilada sauce. The only thing that I may change next time is that I will try it with flour tortillas instead of the corn, only because the husband isn't a huge fan of the corn. Southern Pecan Praline Cake

Hey friends!  I've had this recipe saved and have been waiting for Fall to make it since it just seems like a very "Fall-y" dessert, but Fall is just around the corner, and I couldn't wait any longer so I decided to make it last night! If you're a pecan fan, you'll love this one. This Southern Pecan Praline Cake is a great dessert for after dinner and even makes a yummy breakfast/coffee cake. You know, if cake for breakfast is your kind of thing. Which, why wouldn't it be?! We had this for dessert last night, and I stuck what was left in the refrigerator. Granny's Apple Dumplings

Hey guys!  This recipe comes from my husband's Great-Grandmother. It's one of their family recipes. I had these Apple Dumplings for the first time several years ago when my in-laws made them. I got the recipe from them and like to make them myself on occasion.  As you can see in the pic, the ones I made a few weeks ago turned out a little on the brown side. I was trying to figure out why this happened, and I think that I dipped each "dumpling" into the butter/sugar/cinnamon mixture instead of just pouring it over, which may have caused them to turn out more brown. I probably should have cooked them a little less than 45 minutes as well, since my oven has a tendency to run a little hotter than it probably should .  They did not, however, taste burned at all. These dumplings even taste good when they are reheated in the microwave the next day. This would made a great afterschool snack or dessert to go along with dinner on a school night! Crock-Pot Cola Roast

Hey everyone!  I know, it's summer and crock-pots aren't supposed to be used in the summer, but I guess I'm a weird-o because in my book a crock-pot is fair game any time of the year. Plus, you only need THREE ingredients for this one! I made this a couple of weeks ago, and the husband loved it. I'm not a huge roast fan, but I'll eat it, and this did have a very good taste to it. We used the "sauce" that was leftover in the crock-pot for dipping the roast into, and it turned out to be a great main dish for dinner. Just add a couple of sides, and you've got yourself a delicious meal, any time of the year!
