Hey friends!
I've had this recipe saved and have been waiting for Fall to make it since it just seems like a very "Fall-y" dessert, but Fall is just around the corner, and I couldn't wait any longer so I decided to make it last night!
If you're a pecan fan, you'll love this one. This Southern Pecan Praline Cake is a great dessert for after dinner and even makes a yummy breakfast/coffee cake. You know, if cake for breakfast is your kind of thing. Which, why wouldn't it be?! We had this for dessert last night, and I stuck what was left in the refrigerator. This morning I made a nice, warm pot of coffee and had me a slice to go along with it. It's delicious both ways!
Servings: 12
Prep Time: 20 minutes
Cook Time: 40-50 minutes
Ingredients:
Cake:
1 box of Betty Crocker® Butter Pecan cake mix
16 oz. can of Betty Crocker® Coconut Pecan frosting
4 large eggs
3/4 cup of canola or coconut oil
1 cup of half-and-half
1/2 cup of chopped pecans
Butter Pecan Glaze:
14 oz. can of sweetened condensed milk
3 tablespoons of butter
1/2 cup of chopped pecans
One interesting thing about this recipe is that you put the coconut pecan frosting in with the cake batter instead of putting it on top of the cake. This makes the cake super moist. The glaze that you put on top is made with sweetened condensed milk and butter.
Directions:
Cake:
1.) Preheat oven to 350 degrees Fahrenheit.
2.) Grease or spray a 9 X 13 baking dish with cooking oil.
3.) In a mixing bowl, combine all cake ingredients except pecans (you can mix by hand or use an electric mixer. I used an electric mixer.)
4.) Stir in 1/2 cup of pecans.
5.) Pour batter into dish and bake 40-50 minutes or until toothpick inserted into middle comes out clean (Mine took about 45 minutes.)
Butter Pecan Glaze:
1.) In a small saucepan over medium heat, melt butter.
2.) Add condensed milk and stir. Heat thoroughly.
3.) Remove from heat and stir in other 1/2 cup of chopped pecans.
4.) Spread over entire cake after the cake has cooled (which is what I did), or add to individual pieces as you like.
