I want to share with you a dessert that everyone in our family loves. It's a recipe from the kitchen of my husband's grandma. It's called Chocolate Silk Pie, and it's AWESOME. She always makes this pie for holidays and family get-togethers. It's that dessert that we always look forward to. Last weekend I decided to give it a try myself. It's actually really simple (if you use a store bought crust) and doesn't take much time to bake. It was my first time making it, and I think that it turned out really good. The only thing that went wrong was that I forgot to cover up the pie crust, which she recommends doing for the entire bake time. So, mine turned out a little too brown. And maybe the pie itself was just a tad over cooked on the top..? Probably. I'm still bad about that with this oven...
There was something just a bit different than how hers usually tastes, but I couldn't really put my finger on it. Maybe hers just has that special ingredient of grandma's love that can't be bought 😉
I plan on sharing with her how mine turned out and seeing if she has any recommendations for next time. Oh, and just FYI, for the best taste and texture I definitely recommend letting this pie chill completely in the refrigerator before serving.

Cook Time: 30 minutes
Servings: 6-8
Ingredients:
1 cup chocolate chips
1 stick butter
Pinch of salt
1 cup sugar
1 tablespoon cocoa powder
3 eggs
2/3 cup PET® (or evaporated) milk
1 teaspoon vanilla
Uncooked pie crust
Directions:
1.) Preheat oven to 350 degrees Fahrenheit.
2.) In a microwave safe bowl, mix chocolate chips, stick of butter, and pinch of salt.
3.) Microwave in 30 second intervals, stirring until completely melted.
4.) In a medium bowl, whisk together remaining ingredients.
5.) Add chocolate mixture into this mixture. Whisk until well combined.
6.) Pour filling into uncooked pie crust (cover edges to keep from burning).
7.) Cook about 30 minutes. The middle of the pie should have a jiggle to it when you remove from the oven.
8.) Remove from oven and let cool. Store in refrigerator and serve after completely chilled.
