For this recipe I like to use skinless salmon fillets, and because it is just my husband and I, I usually only use 2 fillets but keep the recipe for the glaze the same. I have cut the recipe for the glaze in half before, and it turns out great as well. I just like keeping the glaze measurements the same because that way we end up with extra glaze that we can use for dipping the salmon into. This dish is great served over a bed of rice and with some steamed veggies. Hope that you enjoy it!

Soy Glazed Salmon
Ingredients:
1/4 cup of brown sugar
1/4 cup of olive oil
3 tablespoons of soy sauce (for a healthier option use low sodium)
2 tablespoons of lemon juice
2 tablespoons of water
2 pounds of salmon fillets
These salmon fillets are from Wal-Mart. They come individually sealed, which is nice when you're only cooking for 2 people. |
Directions:
1.) Preheat oven to 400 degrees Fahrenheit.
2.) Whisk together brown sugar, olive oil, soy sauce, lemon juice, and water to make glaze.
3.) Put salmon into glass baking dish.
4.) Pour glaze over salmon. Turn to coat.
I like to add lemon wedges to the dish and let them cook with the salmon. |
5.) Bake around 15- 20 minutes or until done. Optional: baste the salmon with the glaze every few minutes.
6.) Serve with fresh lemon wedges.
