My favorite way to eat this spread is on Ritz crackers, but you could also put it on bread and make a sandwich out of it. I believe I found this recipe a few years ago on a card that came with a 4 pack of canned chicken breast from Sam's. I make this every once in a while when I am wanting something "light" to eat. It's super easy to whip up, and it makes for a great Springtime snack or lunch!

Servings: 4-6
1/2 cup chopped celery
2 tablespoons of lemon juice
1/3 - 1/2 cup of mayonnaise
1/4 teaspoon of salt
1/2 teaspoon of pepper
1 teaspoon of creole seasoning
1 can of cooked chicken
Directions:
1.) Mix all ingredients together in medium size bowl.
2.) Serve on crackers or use to make sandwich.
